Yamaichi’s Taketaga Ohitsu (container for cooked rice with bamboo hoops) uses Kiso sawara cypress, one of “Kiso Goboku” (Kiso’s Five Softwood Evergreens). Each one is made with care by Shinshu Kiso wood craftsmen. Ohitsu is lately drawing attention since people have once again started noticing the fine qualities of old-fashioned tools. An electric rice cooker is indeed very convenient because rice can be kept warm, however, it cannot stop the taste and texture from changing with time. In comparison, an ohitsu does not have high heat-retaining properties like an electric rice cooker, but the rice (transferred from a rice cooker) will be kept fresh and delicious.

The secret lies in its excellent air permeability and water absorption. The Kiso sawara cypress used for the barrel portion can remove excess moisture and maintain constant humidity. It also prevents the rice from getting sticky or dry and will maintain a chewy texture. Additionally, the subtle scent of Kiso sawara cypress will enhance the rice’s delicious taste. Not only is the Taketaga Ohitsu durable, but it is also beautiful in appearance and will improve with continued use. Extra care will be required due to the use of natural materials but you will soon grow a special attachment to it.

・Do not use a dishwasher,microwave oven.
・Be sure to remove the acne before use.
・Wipe with a wet dishcloth before use to prevent odor, color transfer, and darkening.
・Wash with water or hot water, wipe off moisture, and dry in a well-lit place.
・If you use detergent, use a mild kitchen detergent to wash it.
・Direct sunlight can cause cracks and rattling, so dry it in the shade.
